Vegan "Ricotta" Stuffed Cabbage


Serves 4, as a main course

Ingredients:

Vegan “ricotta”: (can be made ahead)
cashews
garlic
lemon juice
ume vinegar (or sub more lemon + salt)
crumbled firm tofu
dried oregano
red pepper flakes
raw kale (or spinach)
chives and/or other fresh herbs
salt & pepper, to taste

For the cabbage rolls:
cabbage leaves
marinara sauce
olive oil
(optional) - parmesan or pecorino cheese
