Spiced Butternut Squash

Serves 6-8, as a side course

Ingredients:

butternut squash, cut into bite size pieces
olive oil 
red onions, diced
garlic, diced
allspice
cinnamon
ground cloves
nutmeg
maple syrup or honey
salt and pepper
walnuts
raisins

chopped cilantro


 

Directions:

Place squash on cookie sheet leaving some liquid in the bowl which will be used to coat the raisins and walnuts to be added later.
Bake at 425 turning occasionally
After about 15 min add raisins and walnuts then finish cooking until the squash is soft inside and brown outside.

If they start to get to burn,  lightly cover with foil until the squash is cooked.

Serve with cilantro garnish.  Enjoy!
