Brown Rice & Arame Seaweed Salad

Serves 4-6, as a side course


1/2 cup dry brown rice
1 1/4 cup water
1/2 tsp salt
1 cup dry arame seaweed
1 red pepper, julienned
3 green onions, chopped
1 tbsp sesame seeds, for serving

1 tsp toasted sesame oil
1 tbsp canola oil
1 tsp soy sauce
1 tsp rice vinegar
1 tbsp lemon juice
1 tsp sweetener of choice (maple syrup, agave or honey)
1-inch piece of ginger, minced
1 garlic clove, minced
Salt & pepper, to taste
