Pizza with Goat Cheese, Mushrooms & Sundried Tomatoes

Serves Varies, as a appetizer course


12 oz cremini mushrooms (sliced and diced)

2 cloves of garlic, sliced thinly

3/4 cup of sundried tomatoes (julienned and soaked in some olive oil)

4 oz plain goat cheese

1/2 avocado

1/2 cup chopped kalamata olives (pitted and chopped up)

  1. Sautee mushrooms and garlic until they are soft and brown.
  2. Slice avocado into small pieces.
  3. Spread the dough out on oiled pan-- it should be pretty thin, maybe 1/4 inch.
  4. Sprinkle olive oil over top of dough.
  5. Place toppings over pizza. Use small spoon to place bits of goat cheese over dough.
  6. Drizzle salt, pepper and olive oil over the pizza before baking.
  7. Bake in a 425F oven for 10 minutes.
  8. Cut up and enjoy!
